On Wednesdays, we eat soup.
Each Wednesday is soup night in our house and I’m always looking for new soups to try and something that the boys will also want to eat too. This week I decided to make my own version of taco soup. A lot of recipes I was finding on Pinterest had ingredients that we don’t eat and I wanted to put my own spin on a soup to make it a little healthier.
Turkey Taco Soup
• 2 lbs. Ground turkey
• 1 can of Corn
• 1 can Black Beans
• 1 can Red Beans
• 1 can of Rotel mild diced tomatoes and chilies (you can get the spicy Rotel if you want some more kick in your soup)
• 1 packet of Hidden Valley Ranch Seasoning
• 2 packets of Taco Seasoning
Optional toppings:
• Dollop of sour cream
• Sprinkle of cheese
• Tortilla chips
I cooked the ground turkey in a pan. Once it was cooked I added the taco seasoning to the meat let that sit on low for about 10 minutes. In a separate pot, I added all the canned ingredients and the packet of Hidden Valley Ranch seasoning. I did not drain any of the cans, except for the corn. Let the pot simmer for about 20 minutes and then stir in your pan of ground turkey. I topped the soup with sour cream and cheese, but I bet some fresh cilantro would be a great addition as well (will try that next time). This soup is very hearty and meaty so the boys liked dipping tortilla chips in theirs.
And the boys approved!
